Flowers for cooking

Do you like flowers? Then you should eat them. Discover the many recipes to savour this wonder of the eyes, the mouth and the nose. Here, we'll show you how to prepare some first dishes...

Rice with herbs
Ingredients: 300 gr. of rice, 1/2 kg of pees, 1 dl of cream, 1/2 tea spoon of grind curcuma, 4 calendule flowers, 3 spoons on grind mint, 4 spoons of olive oil.
Boil the rice with the curcuma till all the water is absorbed (about 40 minutes). Cook the pees with steam for 15 minutes with a spoon of mint then add the rice. Add the cream the olive oil. Let it cool before serving. Decorate with mint and calendule flowers.

"Acquacotta" with thyme
Ingredients; 800 gr. of taraxacum, mallow, chicory and nettle, 100 gr. of bacon (cut in one slice), 1 seller rib, 1 onion, a small bunch of thyme, 4 spoons of olive oil, stale bread, salt.
Put in a pan olive oil, bacon cut in small pieces, seller, onion cut in slices and thyme. Brown and add the chopped herbs and a liter and a half of water. Cook for 30 minutes and add salt. Put some slices of toasted bread on the bottom of four dishes and pour the shot soup on them. 

"Pappardelle" of the wood
Ingredients: 400 gr. of pappardelle, 400 gr. of boletus mushrooms, 1/2 kg of peeled tomatoes, 1 onion, 2 cloves of garlic, 2 small boughs of savory, 2 sage leaves, a rosemary bough, a bunch of parsley, 1/2 glass of dry white wine, 4 spoons of olive oil, salt and pepper.
Clean the mushrooms, mince the stalks and keep the upper part aside. Mince the onion, garlic, rosemary, savory and a half of the parsley and brown them on low fire with oil. Add the mushrooms, sprinkle with wine and let it dry off. Add the tomatoes and cook the sauce for a few minutes putting salt and pepper. Meanwhile cut the rest of the mushrooms and add them to the sauce and cook for 10 minutes. Cook the pasta underdone and season it with the sauce, put the pepper and minced parsley before serving.
